Serving tables shouldn't be a problem as waiters were allowed pretty much whatever they requested. Kitchen - form what I remember, no chance to change a shift, unless its quiet but that's another negative thing. Especially considering chef job a lot more demanding physicly. Whole place did seem to me set for money "production" no matter what.
